Suzhou's cuisine relies greatly on the many lakes and rivers that encircle the city. Traditional Jiangsu dishes, a significant component of Suzhou cuisine, are characterized by sweet flavors, rich aromas, unique colors, and elaborate preparation methods. Because Suzhou is known to have four very distinctive seasons, its culinary practices have become closely connected with the changing seasons. During the spring and summer months flavors range on the lighter side with dishes such as Bilu Xiaren (lightly fried shrimp with Biluochun Tea) and Xigla Ji (young chicken wrapped in watermelon rind). As the weather turns colder steamed crab, seafood soups, and Songshu Guiyu (stewed and fried mandarin fish) become dishes of choice.view more
