Datong Cuisine
Famous for its wide variety of flour based dishes, Shanxi Province, and Datong in particular serves a selection of nearly 1,000 different types of staples and snacks in the form of jiaozi dumplings, cakes, tarts, pancakes, and noodles. Staple ingredients in many Shanxi noodle dishes are oil and salt, which adds a great deal of flavor to the simple, yet tasty meals. Some of Datong's local specialties include tender Instant Boiled Lamb, Cat Ear Noodles (don't worry, they're only shaped like cat ears!), Pea Noodles, Yellow Cake, and Crispy Soy Beans.
